I like to change it up! Sometimes it works sometimes it doesn’t. In this case!!! MMMM MMM MMM Good! Best Sandwich Breakfast Sandwich I’ve ever made.

Prep Time: 10 min      Cooking Time: 15-20 min     Preheat Oven: 350

Ingredients:  

  1.   2   Slices of Bread
  2.   1   Egg
  3.   3 Pieces of Cooked Bacon
  4.   Small Handful of Shredded Colby Cheese
  5.   As Much as Desired Diced Red Onion
  6.  5 Small Leafs of Spinach
  7.  2 Slices of Roma Tomato
  8.  4 Slices of Avocado
  9.  Butter
  10.  Mustard
  11.  Mayo (If you must!)

Directions:

I cooked the bacon the way I like it a little crispy with some soft spots and set it to the side on some paper towel to get as much grease off as possible.

BLT (1 of 3)

I had some Italian bread I needed to use before it went bad, that was left over from dinner. So I used it, but I would recommend wheat or sourdough. I smashed the bread down trying to leave the crust as little wall to hold the egg inside. I have two slices of bread in the picture because I was making two sandwiches.

BLT (2 of 3)Than I just cracked an egg on the bread. If a little runs off that is OK. It happen to me. I just used a fork to try to get as much back on the bread as possible. I also took the fork and spread the yoke a little. I personally don’t like yoke. I than spread cheese all around the outskirts of the bread to make sure when it was cooked it would hold the egg in the bread.

I baked it at 350 for 10 Mins, than turned the oven on Broil and watched til the cheese got crispy. I than turn the oven back to 350 and let it sit in the oven for another 5 mins or so, I like my egg cooked all the way.

I didn’t take a picture after the oven sorry, I should have taken more because it turned out better than I could have expected. I took the bread out of the oven. On the extra piece of bread I spread Mustard and Sriracha on mine and Mayo and Mustard on the other. I layered the bacon, spinach, onion, tomato, and avocado onto the oven cooked slice of bread and placed the extra bread right on top making a sandwich. I than fried the sandwich on the stove till both outside slices were golden brown.

It is Now ready to Eat!!! Hope you like it as much as I did.
